I had an eggplant, I didn't want Eggplant Parmesan, but I was going to cook this eggplant anyway before it went bad. Witch is funny, because most of the eggplants I buy have a worm or 2 inside. Thriving in the jungle I guess. And I had just made fresh Ricotta. We are having family visit us today, and I wanted to serve the ricotta on toasted baguette. Anyway I came up with eggplant, ricotta, tomato and basil. Then I just drizzled it with olive oil and some awesome balsamic vinegar a friend brought for me form the states. Of course I added hot chile seeds. Chuck and loved it, for a fresh and healthy dinner last night. I just sliced and peeled the eggplant and baked it with salt, pepper, chili seeds and olive oil, with Panko and flour. Baked until browned.
