Hand Pies, Pumpkin and Lemon

I wanted to try out small pies so if they turn out I might be making them for my Friendsgiving Dinner. Since we are in Costa Rica and without our family, ( our son Casey and his friend Kelsie will be with us) we have a Friendsgiving for the last three years. We have about twenty people come and enjoy dinner with us. I would love to have more but my space is limited. Everyone brings something to the table. We eat, laugh,drink and all enjoy ourselves even though we are all expats without our families. It's funny how many good friends we have here in the jungle.

So the pies, I used my regular crust and added a little bit of sugar and topped them with this big sugar. The first one is the lemon, tart form the lemon curd and not to sweet form the crust. Altogether it's a win for me. On to the Pumpkin, well it's a sweet little Pumpkin Pie! Now I think I need to make these and see how they freeze. I gave some away to my friend Heidi and Graham and we ate the rest, so now I need to make more. This will make you fall in love with fall baking. Meat pies next?  I got 10 small pies of each, Lemon and Pumpkin.

                                                                                                            Pumpkin Hand Pies

 

 

 

 

 

Recipe for the Lemon Curd.  Adapted from lemons for Lulu

 

1/4 cup butter melted

1/2 cup sugar

2 eggs

1 lemon zested

1/2 cup lemon juice

 

The Crust

1 1/2 cups of flour

1/2 teaspoon salt

1/2 cup cold unsalted butter

1/4 cup ice cold water

1 tablespoon sugar

 

Put flour, salt, sugar and butter in food processor and blend for 8 seconds

Add the water and pulse until it all starts to come together, not into a ball, Just before that.

Put dough in plastic wrap and chill for an hour or so.

 

In a bowl, combine sugar and eggs. Whisk in lemon zest and lemon juice. Stir in melted butter. Microwave lemon mixture for 1-minute stir. Continue to heat lemon mixture in 1-minute intervals until mixture begins to thicken and easily coats the back of a spoon. Put through a fine screen strainer into a bowl, this gets all the little bits of stuff out.  Refrigerate to set.

 

Roll out crust and cut with 2 1/2 to 3 in. cookie cutter place on parchment paper lined cookie sheet, lay 9 or 10 of the circles on the sheet add about 1 Tablespoon of the lemon mixture on top of each circle and put the other circles on top and push down the sides gently and then use a fork to seal all the way around. Brush with the egg and 1 Tablespoon of water mixed together and sprinkle with the sugar. Bake at 350 for 20 minutes or until golden brown.

Recipe for the pumpkin 

 

1 cup pumpkin puree

3/8 cup brown sugar

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

1 Tablespoon heavy cream

Pie Crust, home made or store bought

1 egg for egg wash

cinnamon and sugar for the top

 

Mix pumpkin, brown sugar,cinnamon,nutmeg, heavy cream together set aside  and get crust ready.

 

Roll out crust and cut with 2 1/2 to 3 in. cookie cutter, place on parchment paper lined cookie sheet, lay 5 of the circles on the sheet add about 1 Tablespoon of the pumpkin mixture on top of each circle and put the other circles on top and push down the sides gently and then use a fork to seal all the way around. Brush with the egg and 1 Tablespoon of water mixed together and sprinkle with the cimmamon and sugar. Bake at 350 for 20 minutes or until golden brown.
