This is not thin crust, I know many people love thin crust now a days and I do to but sometimes I crave the thick yeasty flavor and smell of this fluffy dough of Grandma Marie's. My kitchen is in a nostalgia kind of mood today. Marie (Chucks Grandma) lived down the street form Chuck and I when we first got married 43 years ago and I would walk down there almost everyday to see her and to see what she was cooking, I wasn't much of a cook at all but over the years of watching her love her food that is what I became, a lover of food and how to make it. It was the way she would scrap out an egg with her finger to get every bit of it out, no waste. It was the smell of sauce bubbling on her stove, or the pans and I mean pans of pizza dough waiting to go into the oven, she would have them spread out on her kitchen table ( it was a red metal table) and all she would put on them was sauce and some cheese so simple and yet so delicious. The pans were cookie sheets and there would be at least 8 or 9 of them. The smell of the dough was something I will never forget. She would keep some of the pizza and give some away to us and most of it went into the freezer for any time she wanted a slice she had it. Oh the things that were in that freezer were magical. You could find pizza, burritos, fudge and lots of cookies all made by her. My kids when they were small would go down to Grandma Marie's to get something out of that freezer. She was all about food. And this is the women who taught me to cook, and have an appreciation of all kinds of food. From salted dry olives to hard as rock and oh so good garbonzo beans to simple popcorn that we would sit around and eat while taking about everything and nothing. She was my friend.
Chuck likes it crispy. This is Italian sausage with fresh mozzarella and caramelized onions.
Knead for 8 to 10 minutes and it is ready to rise.
This recipe makes 2 cookie sheet pizza's, so one is a pizza and one is a Focaccia with rosemary, garlic and sea salt. So good with a glass of wine.
Grandma Marie's Pizza Dough for 2 cookie sheet pizzas
6 cups of Flour
1 pkg.of yeast
1 Tablespoon of salt
1 Tablespoon of sugar
1 cup of lukewarm water
1/4 cup of oil, I used olive oil
1 cup of hot milk
Melt yeast in warm water, add to the hot milk
Mix salt, sugar and flour together
Add water and milk and oil to flour mix together and knead well 8 to 10 minutes
Put in large bowl and let rise 3 hours
When risen shape into pizzas, if it does not stretch at first give it a minute and it will
Add whatever you like on top and bake in a hot oven 400 degrees, if to hot turn down and bake for 20 to 25 minutes.
