Cream Cheese and Raspberry bundle of goodness

 This comes together so easy really. I know it looks hard but the dough is easy to work with and as you can see I am not good at cutting it even and it still came out looking pretty. But the flavor is outstanding, it's a yeasted  sweet dough and it's so hard to stop eating I was just going to make the cream cheese one but I had a little bit of Raspberry Jam left over so I put it on top of the cream cheese and perfect. We ate it up so fast I didn't even take a photo of the sliced piece. Gave some away to our neighbors and Chuck and I polished off the rest, I don't think I should make this one again. It's just to good with my morning coffee and I never have any will power.

 I know my lines for cutting are not so good.

 

 

And yet look at it, I think it's pretty do you? I found this recipe on King Arthur Flour

 

For the Dough

 

2 1/4 teaspoon yeast

1/4 cup lukewarm water

1/2 cup lukewarm milk

1/4 cup butter ( 4 Tablespoons) softened

1 1/4 teaspoons salt

1/4 cup sugar

1 teaspoon vanilla

1 large egg, lightly beaten

3 cups of flour

 

 

Filling

 

1 cup ( 8oz.) cream cheese

1/2 cup sugar

3 Tablespoons of flour

1 large egg lightly beaten

2 teaspoons of vanilla

1/2 to 1 cup of jam that you like

 

To brush on top

1 egg yolk

1 Tablespoon water

Sugar to sprinkle on top

 

 

To make the dough combine all the dough ingredients mix and knead together by hand. Knead until you have a soft smooth dough about 8 minutes.

Allow the dough to rise for about 45 to 1 hour until it puffs up. 

While the dough is rising make the filling

 Mix all the ingredients together until smooth. Chill until ready to use.

To assemble the braid, place a piece of parchment paper on a table and put 1/2 of the dough on it, I sprayed it with a little bit of cooking spray

Roll the dough into a 12"x8" rectangle. Spread 1/2 of the cream cheese mixture lengthwise down the center of the dough. Put spoons of the Jam on top.

Cut 1" wide strips from each side of the filling out to the edge of the dough.

Fold in the top and bottom like I did in the picture, now take the strips of dough one at a time and gently fold strips over the filling, one from each side until you have folding them all over each other.

Now do this with the other piece of dough on a different cookie sheet. 

 

Whisk the egg and water together and gently brush over the bundles and sprinkle with sugar 

Bake at 350 degrees for 35 to 40 minutes until golden brown cool on a rack. Enjoy it!
