Pita Chips made from homemade Pita Bread

I cannot find good Pita Chips in our stores so I make my own and they really do turn out good. You can use the Pita Bread to make sandwiches with or cut into triangles and add sea salt, pepper, chile flacks and whatever you like and bake them until crisp and serve with your favorite dip, like hummus. 

 

 

 

 

 

 

 

 

 

1 cup hot water but not boiling

2 teaspoons of dry yeast

2 1/2 to 3 cups of flour

2 teaspoons of salt

1 Tablespoon of olive oil

 

 

Mix the water and the yeast together in a large bowl and let sit for about 5 minutes or until the yeast is dissolved. Add 2 1/2 cups of the flour, salt and olive oil to the bowl mix together. Now, Sprinkle a little flour on a work surface and knead the dough adding more of the last cup of flour as needed. Knead the dough for about 5 to 7 minutes or until the dough is smooth and elastic. Try not to add to much flour better to be a little sticky.

Add a little olive oil to a bowl or the same bowl you mixed the dough in, and put the dough in to rise for about 1 hour or until doubled in size.

 

Gently deflate the dough and put on a lightly floured work surface. Divide in half with a bench scraper and now cut into 8 pieces and gently flatten each piece into a disk. Using a floured rolling pin roll one piece at a time into a 8-9 inch circle about 1/4 inch thick. Lift and turn the dough often as you roll to make sure the dough does not stick. Sprinkle with a little flour if sticking, if the dough springs back let it sit for a second or two then continue to roll out the dough. Repeat with all the pieces of dough. 

Warn up your cast iron skillet over medium heat you do want it to be good and hot. Drizzle a little bit of oil in the pan and wipe off excess. Lay a rolled out pita in the skillet and let it cook for about 30 seconds until you see bubbles form. Flip it over and cook for 1-2 minutes more, until you see large toasted spots. Flip again if needed. The pita should puff a bit during the next flip. Continue with the rest of the pita. 

Cut the rounds if you like into triangles and brush with olive oil and sprinkle with sea salt, pepper, chile flacks or what ever you like and put the pita on parchment lined cookie sheets and bake at 350 degrees for about 15 minutes and then flip and cook until golden.
