Wow these are deliriously delicious crackers although they look like a cookie these are going to go with my lentil soup I made today. I didn't have any crackers or good bread to go along so I made these crackers. Glad I did and so is Chuck. But don't mistake them for sweet cookies they are not, the blue cheese flavor is strong and these little guys are perfect to go with wine or a cold beer. They are rich. I used pecans but I think pine nuts would be good too. I used a small glass to smash them down a bit before baking. Oh and my shell collection, don't you love it I sure do and it changes all the time I take some back to the beach if I find a new one I like.
1 cup crumbled blue cheese chilled
1/2 cup unsalted butter at room temp.
1 cup all purpose flour
1/4 teaspoon ground black pepper
1/4 teaspoon cayenne pepper
1/2 cup pecans coarsely chopped or Pine nuts
Preheat oven to 350 degrees and using a hand mixer beat cheese, butter, pepper and cayenne pepper together just until blended, some of the cheese will be in separate pieces and that's ok.
Using a rubber spatula, mix in the flour and the pecans .
Form dough into 1 inch balls and arrange balls on cookie sheet lined with parchment paper and flatten down gently with the bottom of a small glass dipped into flour so it will not stick. Bake until golden around edges about 15-20 minutes cool and enjoy.
