Today it's all about Pecans, I started with a Pecan Coffee Cake for friends that just came into Nosara so I wanted to have them over for Coffee and Cake outside on the Rancho. Tonight it's Peacan Pie Bars for the Book Club ladies. We read a southern style book and we try to theme our book and food together somethings it works. The funny thing is my Pecans are from here in Costa Rica, oh and I just ordered some Macadamia Nuts form a friend that has a Macadamia Farm on the other side of the Country, and they are so good too. Coming up Macadamia Nut recipes.So I guess this recipe is really not southern or maybe I could say southern Costa Rica. One more thing I didn't have any oats for this recipe but I did have a packet of instant Maple and Oat hot cereal so I used it and it turned out fine, just saying sometimes baking science can be forgiving.
Set oven to 350 degrees and use a 8x8 inch pan

1/4 cup flour
1/4 cup oats
1/2 cup or a little more pecan pieces
1/4 teaspoon salt
1/2 cup brown sugar packed
2 teaspoons of cinnamon
1 stick (1/2 cup) unsalted butter melted
2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1 stick butter at room temperature
2/3 cup brown sugar packed
2 large egg yolks at room temperature
2/3 cup buttermilk at room temperature
2 teaspoons of vanilla extract
Preheat oven to 350 degrees F. Grease an 8x8 inch pan with cooking spray.
For the Streusel
Whisk together all the dry ingredients
Bake the pecans first in the oven with a little sea salt on top for about 5-8 minutes, don't let them burn
Chop up the pecans
Stir in the pecans and melted butter and set aside.
Whisk together the dry ingredients and set aside
Cream the butter and sugar together for about 1-2 minutes
Stir in egg yolks, milk and vanilla
Stir in the dry ingredients, please don't over mix
Spread 1/2 of the batter into the greased pan
Place spoonfuls of the Streusel on top and spread a bit over the batter
Top with the rest of the batter and spread
Top with spoonfuls of Streusel
Bake for about 20-30 minutes or until a clean toothpick comes out.
Whisk together dry ingredients. Set aside. The batter will be thick but it will spread out.
Cream together butter and sugar until fluffy, about 1 - 2 minutes.
Stir in eggs, milk, and vanilla.
Stir in dry ingredients. Be sure to not over mix or you'll end up with tough cake.
Spread 1/2 of the batter into prepared pan.
Sprinkle top with 1/2 streusel.
Top with the rest of the batter and then top that with the rest of the streusel.
Bake in the preheated oven for 20 - 30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
Southern Pecan Pie Bars for the Book Club
This really is an easy dessert recipe and so good.
Set oven to 350 degrees and lightly spray an 9x13 inch pan
Serves 10 to 12
This is more like a slap pie, I would use a plate and fork with this one and maybe some ice cream on the side

For the Crust, shortbread so you know it's good
2 cups of flour
1/2 cup powdered sugar
1 cup of butter softened, I know that's a lot and you need it. That's two sticks
For the Pecan Filling
3 eggs at room temperature, beaten
1 cup light corn syrup, it's ok you hardly ever have it.
2 Tablespoons butter melted, yes more
1 cup light brown sugar or dark, packed
1 teaspoon vanilla extract
2 cups of chopped pecans that have been roasted in the over for 5-8 minutes with a little sea salt sprinkled on top, don't burn them.
In a large bowl cream the crust ingredients together
Spread the crust mixture into the bottom of a lightly greased 9x13 pan
Bake at 350 for 15 minutes
While the crust is baking prepare the filling
Combine the eggs, corn syrup, butter, sugar and vanilla in a large bowl and whisk together, stir in pecan pieces
Pour the mixture over the crust and spread evenly
Bake at 350 for 30 to 40 minutes, until the pecan filling is set to the touch and a little golden brown on top
Let cool and slice, oh boy.
