Lemon Sour Cream Cake fresh off the Grill

 I had a big problem as this does happen in the Jungle now and then. The electricity goes on and off on some days and today was a very windy day. I should have paid attention to the wind. But I didn't and I put this lemon scented cake into the oven and set the timer to 55 minutes. Well at 25 minutes left to go the electricity went off, off I said and thats not all I said but I will not repeat it here. Chuck to the rescue as usual and he said, should I turn on the BBQ Grill and I thought why not at this point. So he set the Grill to 325 degrees and we put the cake in and It did the job, the cake didn't rise as it should have but hey it worked and tasted great. I forget to tell you that our Thanksgiving Turkey ended up on the BBQ as well. The electricity was off that day for about 2 hours in the middle of the turkey roasting and mashed potatoes cooking. But it did go back on around gravy time. Such is the life of a living the dream retiree in the Costa Rica jungle cooking and blogging and having fun. 

 

 

 

 

 

 

 

 

 

2 1/4 cups of flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 3/4 cups sugar

1 cup sour cream

2 Tablespoons grated lemon peel

3/4 cup vegetable oil I used part olive oil

4 eggs

4 Tablespoons lemon juice, divided

1 teaspoon vanilla extract

1 cup powdered sugar

 

Heat oven to 325 degrees, spray and flour your bunt pan really well. Whisk the flour, baking powder, baking soda and salt in a medium bowl. Beat the sugar, sour cream, oil and lemon peel in a large bowl at medium speed until smooth. Beat in the eggs one at a time beating well. Beat in 2 Tablespoons of the grated lemon peel and vanilla extract. At low speed beat in the flour mixture just until blended, spoon the batter into the pan. Bake for 55 to 60 minutes or until a wooden skewer comes out clean. Cool in pan for 10 minutes and then invert onto a cake plate. Mix the last 2 Tablespoons of Lemon juice and powdered sugar together and drizzle over cake and enjoy. Hope you don't need to use the BBQ. Good luck
