Chili Relleno Casserole

Week night dinner for 4 in a hurry. Mix up some eggs and milk and pour over cheesy filled mild chilies and dinner is in 45 min. 30 minute meals are so, most of the time not happening ok I'll give ya grilled cheese. Although you could make this casserole in the morning and just put it in the oven later. Add some beans and mexican style rice and it's perfect. Don't get me wrong I love fried Chili Rellenos and I do make them, I just didn't want them for tonight. I used two cans of whole chilies and used all but one chili, I wanted to put it in my grilled cheese sandwich. Look how this baby puffs up so pretty. You could put what ever you like inside the chili, beans or some meat or rice. 








2 cans green chilies drained well. 

1 or cups of grated cheese I used pepper jack and cheddar.

4 eggs

1/4 teaspoon salt

1 teaspoon baking powder

1 14 cup milk

2 Tablespoons of flour

salt and pepper to taste


Spray a pan with cooking spray 

drain the chilies well

using one chili at a time stuff it with the cheese and lay in pan

Mix up the eggs with the milk, flour, baking powder and salt 

Pour over the filled chilies add a little more cheese on top and bake in a 350 oven for about 40 minuter or until golden on top
