Not just Peanut Butter Cups

I am not making these again without the jam. Oh and the sea salt, both make them so much better. Really I should not be making them at all because sitting in my freezer they call my name every evening until they are all gone. Chuck does the same thing and he always says I don't like sweets. Actually he has been eating more sweets than his normal, oh times they are a changing. 

 

 

 

 

1/2 Cup peanut butter. I used creamy.

About 1/2 cup or less jam that you like I used raspberry

2 Tablespoons unsalted butter, room temp

1/8 teaspoon salt

1/2 Cup powdered sugar

16 ounces chocolate chips or chocolate you choose.

1 Tablespoon shortening

Cooking spray

small candy paper liners or not

sea salt 

 

 

 Put the peanut butter, unsalted butter and salt in a microwaveable bowl and heat in the the micro for about 1 min. or less, soft but not all the way melted. Stir in the powdered sugar.

Melt the chocolate chips and shortening in a heatproof bowl placed over a saucepan of simmering water.

Drop a teaspoon of the melted chocolate into each of the miniature muffin cups that have been sprayed with cooking spray. Top the melted chocolate with a scant teaspoon of  peanut butter and Jam, and add a teaspoon or so of melted chocolate and  sprinkle on sea salt I like to freeze them because it's very hot in this jungle.  Enjoy.
