My favorite Oatmeal Cookie, simple and Praline tasting. I roast the Pecans for about 5 or 6 minutes to bring out the flavor.
I just got back from California and loved seeing all my family and now I love being back in the jungle baking in my silly little oven.
It works just fine for me. Even if I had a beautiful fancy oven outside I really don't think my cooking would be that much different so here I am baking and cooking outside in this tiny oven in my patio looking at all the greenery and today the blue sky is spectacular. I think thats why the cookie taste so good.
2 sticks unsalted butter, room temperature
1 Cup white sugar
1 Cup packed brown sugar
2 large eggs at room temp,
2 teaspoons pure vanilla
1 1/2 Cups flour
1 teaspoon cinnamon
1 teaspoon baking powder
1 teaspoon salt
3 Cups oats
1 1/2 Cups chopped pecans roasted and then chopped
Preheat oven to 350 degrees
Place the pecans on a cookie sheet and bake for about 5 minutes be careful they can burn fast. chop them into corse pieces.
Cream the sugars and butter together until creamy. Mix in egg and vanilla.
Sift the flour, baking powder, cinnamon and salt into the egg mixture. Add oats and nuts. Drop 2 inch rounds of batter onto parchment lined cookie sheet, flatten slightly. Bake for 12 -15 min. or until just a little golden around edges.
